spartancookbookThis time of year, every high school in America is poised to celebrate the end of the football season with a team dinner.  My son’s Team Moms Club published a cookbook at the conclusion of his senior season.  Entitled “You Gotta Feed ’em to Beat ’em,” it contains all our kids’ team dinner favorites!  From ‘Spartan Salsa’ to ‘Lean Right Chinese Chicken Salad’ to ‘Chicken Parmesan’ to ‘Ice Cream Waffles’, this is a collection of high-calorie, serve-ALOT, make-ahead recipes perfect to satisfy the tastes of hungry teenage boys! Unfortunately, this limited production cookbook can only be found in the homes of our team families.  But to make sure the best of the best can be enjoyed by all of you, below are my favorites.  ENJOY!  And Go Team Go!







Artichoke Dip

(Double or triple to feed your crowd)

1 16 oz can artichoke hearts, packed in water, drained and chopped

1 cup grated parmesan cheese

1 cup mayo

1 can green chilies, chopped (Ortega)

8 oz shredded mozzarella cheese

Mix all ingredients together. Spoon mixture into baking dish. Bake at 350 degrees for 30-40 minutes or until top is bubbly and golden in color. Serve with crackers.


BEST SIDE DISH – serve with pork tenderloin, tri tip or grilled chicken!

Creamy Potatoes

(Double or triple to feed your crowd)

1 30 oz frozen Ore-Ida Shredded Potatoes

2 cups half-and-half

1 cube butter

Salt, parmesan cheese, paprika

In a large saucepan bring half-and-half and butter to a slow boil… add potatoes… stir until they become creamy (10-15 minutes)… season with salt.  Put in a buttered casserole dish.  Sprinkle with a little parmesan cheese and paprika. Bake at 325 degrees for one hour.


BEST ENTRE – serve with a salad or veg or stir in a large container of fresh baby spinach

Creamy Pesto Pasta

(reduce as needed to serve your crowd)

3 containers Armanino frozen pesto sauce

9 16 oz jars of Classico Alfredo Sauce

Parmesan cheese for finishing

Combine sauces in a large saucepan and heat over medium heat – stirring to combine.  Prepare 15 pounds of cheese tortellini.  Stir pasta into sauce and sprinkle with parmesan cheese.



Ice Cream Sandwich Cake

(serves 90 – reduce for a smaller team!)

4 packages of 24 vanilla ice cream sandwiches

6 cartons of your favorite ice cream (e.g., chocolate chip, mint chip)

6 large containers Cool Whip

12 Oreo cookies (2 per cake)

Carmel or/and chocolate syrup

6 9×13 aluminum foil pans

In pan lay 7 1/2 ice cream sandwiches side by side (in the same direction) to cover bottom layer of pan. Cut your favorite ice cream into slices and smooth over layers of ice cream sandwiches. Lay another layer of ice cream sandwiches over ice cream.  Top with Cool Whip covering completely.  Grate Oreo cookies over Cool Whip and swirl syrup to add a tasty finish (and even more calories!)



So there you have it!  What a great way to end a great season!
