GRAM’S SPECIAL BIRTHDAY SALAD with Shrimp and Pineapple

This is an old family favorite, served only for birthday dinners!

SERVES 4

INGREDIENTS

4-6 cups Romaine lettuce – washed, dried and torn or sliced
15 ounce can of pineapple chunks – drained, juice reserved
1/2 pound cooked baby shrimp
1/4 cup sour cream
1/4 cup mayonnaise

PREPARATION

Place torn lettuce, pineapple chunks and shrimp in a salad bowl.
Mix sour cream, mayonnaise and 2-3 tablespoons of the reserved pineapple juices and toss into salad.
